From what I've heard, Unity is hands down the best for beginners. If you're not a beginner in 3D programming, I can't help you much there I'm afraid ;)

Have you had a look at the 'lighting effects' example capx? I'm sure that would work for Fog of War in a pinch.
Using one sprite with multiple animations or animations frames is a way to do it without families.

You'll probably want to make the collision polygons or the size of the blocks a tad smaller.
You should read the documentation. That audio file isn't blank, it's the convolution. If the audio file is different, the convolution is different. Apparently there are websites and libraries where you can download these effects.
