Ya I had to destroy almost every object manually in my game (none of them are global) so it's probably a bug that some objects transfer somehow (although I haven't checked if its been fixed in recent months).

It just depends on how you code your UI, it's going to be different for every game. UI and navigating menus is a great coding practice.
Make sure your Mac OSX is 10.7 or later, unfortunately it doesn't work on 10.6 or earlier.

if you want more control, perhaps just use a variable. Add 60*dt (1 a second basically) to a variable then check when it is greater than 300 (i think thats 5 seconds) then do what you wanted to do as actions then subtract 300.
It's possible. I did some of these things in my game, but my game was much smaller scope and still took over a year to finish.
I don't see what's exciting about paying a $100 fee, most games on the app store don't even make that much total.
