Between 30-50% is standard (from my experience and what I've seen on forums). if there's more members in the team the % will go down. It also depends on the game you're developing. An hidden object game is much more work than an quiz game for a game artist.

I've done profit-shares before, and then I worked for a 50/50 split.

10% sounds extremely low. How do you justify you keeping 90%?

And here's my tip (based on experience): if you get a team together, make sure you have an art director (can be one of the game artist. Or if there's more, the best one). Get feedback from the whole team, but let the art director have the final say. That way the game will have a consistent look (if the art director is any good), and the artist(s) won't quit after 2 weeks.

I think you need a bit more practice if you want to get some freelance work. Or maybe it was because you did the examples in 15 min? Can you spend 2-3 hours on your examples? Maybe that will improve the quality.

Expecting people to work for free is a bit naive. Why don't you offer your coding skill in return for music and graphics?
