Yes, you an have more than one tilemaps. If you place them on the layout you can switch between them using "Z order" panel (which is dumb). But I will recommend to insert every tilemap on separate layer.

Not sure if it's the latest version or not, Did'n play with official shadow till now. But at this current time this "feature" is useless, unless your are using only one light for entire layout.
oh. and your demo link don't work.

Profit share usually never work. Clear talk from personal experience. You dedicate yourself to a project for your share after release.... and few months later you are notified that the game was canceled or put "on hold". Good luck though, Image looks nice.
I don't have an access to wifi, so can't help with that.
But it runs smoothly while testing it over USB and XDK.

It depends what you prefer. You can use built in XML or
plugin made by Yann for JSON files (which I highly recomend) https://www.scirra.com/forum/plugin-json-import-export-generate-edit-inspect_t100042
and for saving/loading files you can use NodeWebkit actions.
