That functionality already exists. When you are in the collision polygon editor just right click somewhere on the canvas and select apply to whole animation or apply to all animations.
You should always save a backup of your project before moving to a new version. You should still be able to roll back your project though using this tuorial: construct.net/en/tutorials/open-project-saved-newer-2203 (remember to save a backup first). Or alternatively wait until the next update is rolled out if you are unable to use this one for whatever reason.
Regardless, you can opt out of notifications for Beta releases in the settings. This means you will only be prompted to update when a new stable release is out.
